My friend recently moved from Australia to Dubai with her husband, and as they settle into the golden sands of their new home, their gut health will play a big role in how they adjust. The gut, after all, is our second brain—it affects our mood, energy, and even how we handle change.
This meal is inspired by Middle Eastern flavors and designed to support gut health, helping them feel grounded as they embark on this new adventure. It’s vibrant, nourishing, and easy to digest—a cooling contrast to the warmth of Dubai’s desert air.

This meal is designed to support the gut brain, which plays a key role in digestion, immunity, and emotional resilience—all essential when adapting to new environments.
Gut-Friendly: Fermented foods like yogurt & pickled vegetables provide probiotics for a balanced microbiome.
Cooling & Anti-Inflammatory: Mint, cumin, and turmeric help soothe digestion, which is especially helpful in hot climates.
Easily Digestible: Lentils & roasted eggplant are fiber-rich but gentle on the stomach.
Recipe: Dubai-Inspired Lentil & Roasted Eggplant Bowl
Ingredients (Serves 2-3)
1 cup red lentils, rinsed
2 cups vegetable broth or water
1 small eggplant, diced
1 tbsp olive oil
1 tsp ground cumin
½ tsp turmeric
½ tsp smoked paprika
½ tsp sea salt
½ cup cherry tomatoes, halved
¼ cup cucumber, finely diced
¼ cup fermented pickled vegetables (like Middle Eastern torshi or sauerkraut)
¼ cup Greek or coconut yogurt (for probiotics)
2 tbsp fresh mint, chopped
2 tbsp pomegranate seeds (optional, for gut-friendly polyphenols)
1 tbsp lemon juice
Instructions
Cook the lentils: In a pot, simmer red lentils in vegetable broth for 15-20 minutes until soft. Stir in turmeric and a pinch of salt.
Roast the eggplant: Toss diced eggplant with olive oil, cumin, smoked paprika, and salt. Roast at 200°C (400°F) for 20 minutes, flipping halfway.
Assemble the bowl: Place lentils in a bowl, top with roasted eggplant, cherry tomatoes, cucumber, pickled veggies, and a dollop of yogurt.
Garnish with love: Sprinkle with fresh mint, pomegranate seeds, and a drizzle of lemon juice.

Cooling Mint & Lemon Laban (Middle Eastern Yogurt Drink)
Why? Hydrating and probiotic-rich, laban (or a simple minty yogurt drink) cools the body and supports digestion in hot climates.
How to Make:
Blend ½ cup Greek yogurt (or coconut yogurt), 1 cup cold water, a few fresh mint leaves, and juice of half a lemon. Serve chilled.
Alternative: Caffeine-free cardamom & fennel tea to soothe digestion post-meal.
